What is the procedure to update WBB 4.1 to WBB 5.0.1 ? Should I try 5.0 first ? If so, which package to use, setup or update ?

Click on help in the top menu. There is a documentation on how to update.
Always make complete backup (HTML and database) first.
And if you update via update server, best option, it will automatically go for the latest version

You need to look at the documentation. You need to add the new package servers for WSC. Then search for plugins and it will show the update. You can only update once you have bought the update though.

Which PHP Version have you installed? You Need at least 5.5

I don't know for sure. I just upgraded the existing installation.
