Am I missing something? I thought there was a setting for making forums and categories non-collapsible?

Not that I've seen there isn't.

I changed one of my forums from SMF and I think I was getting confused and remembering that you could set if they were collapsible or not. In SMF you could. I thought I was just not seeing something before my eyes.
In any case, I'd sure like to be able to have that as an option.

You can probably disable it via the style with the help of the CSS code

l was under the impression thatdisplayy: none; simply guides the class.
